Vegetable Ziti Bake

  • diced onions, ¼ cup
  • minced garlic, 2 cloves
  • sliced carrots, ¼ cup
  • sliced mushrooms, ¼ cup
  • fresh spinach, ½ cup
  • light tomato sauce, ¼ cup
  • cooked ziti, 2/3 cup
  • garlic powder
  • part-skim ricotta cheese, ½ cup
  • mozzarella cheese
  • cooking spray, nonfat
Procedure
  • Spray cooking oil in the skillet.
  • Saute garlic and onion.
  • Add mushroom, carrots, and garlic powder.
  • After 2 minutes, add the fresh spinach. When the spinach is wilted, set aside the vegetable mixture.
  • In a separate mixing bowl combine cooked zitti with the vegetable mixture, tomato sauce, and ricotta cheese.
  • Spray cooking oil in the casserole dish and put the combined ingredients.
  • Top with diced tomato.
  • Bake in the oven for 20 minutes.
  • Top with mozzarella cheese and bake uncovered until the cheese has melted.

Ingredients
  • fat-free cream cheese, 3 tbsp
  • unsweetened cocoa powder, 2 tbsp ( divided into 2 parts)
  • sugar substitute, 2 packets
  • rum extract, 1 tsp
Preparation
  • Combine all ingredients except the 2nd part of the cocoa powder. Combine thoroughly until well blended. Put in the refrigerator for about 15 minutes. Roll into small balls and roll again to cover with the remaining part of cocoa powder. Serve.
